Easy Breakfasts? Yes, Please!
Meal planning and prepping breakfasts are hard for me. (Thank you, ADHD.) I know we don’t have to eat “breakfast food” for breakfast, but that just feels….wrong, as a Southerner. But I’m also not going to make time that I don’t have to prepare a home-cooked meal every morning that I’m flying out the door. So right now, my favorite easy breakfast is yogurt with all the fixin’s.

This breakfast choice is a winner for several reasons: first, all the macros are hit. I use Greek yogurt for the protein and toppings for carbohydrates and fats. It’s also a great choice because it’s endlessly customizable. The toppings allow me to change the flavor profiles based on what I’m feeling that day. I typically stick to the same ingredients for the week and change it up for the next week. And the third reason this meal is a winner? It tastes good!
There are several ways you can approach prepping this each week:
You can buy all the ingredients and just have them at home as they are
You could also pre-portion everything for each day, making it even easier to grab either to eat at home or to take with you to work
You can also just take everything to work and leave it there (assuming that’s appropriate for your workplace), making it less likely to forget at home. (Ask me how I know!)
Mixing things up by changing the fruit: pineapple one day and bananas the next.
As I mentioned earlier, I use plain, nonfat Greek yogurt for my base that I can flavor however I choose. For toppings, I’ll typically add a fruit, granola (store-bought or homemade), and some nuts and chia seeds.
This formula also works really well for other bases if you’re avoiding dairy or don’t care for yogurt. Quinoa and oatmeal are options that can be made in advance, though they don’t have as much protein as Greek yogurt. You can bump up the protein by mixing in a protein powder after cooking or adding toppings that are higher in protein.

Berries (fresh or frozen)
Bananas
Pineapple
Citrus
Granola
Chopped pecans or walnuts
Shredded coconut (toasted is even better!)
Chia seeds
Hemp hearts
Honey or molasses
